4 Ingredient Chocolate Mousse

A low effort, high payoff kinda dessert

Ever had a lone egg white hanging out in the back of your fridge? This chocolate mousse recipe should help you out in using it up. It’s quick, it’s luscious and so damn easy to make. I know I said below that it serves two, but realistically, you could make just one serving for yourself and I wouldn’t judge you.

Top tip for ya - use a flavoured chocolate, like Mint or Sea Salt to give your mousse a gorgeous flavour, without having to worry about extracts or exact measurements. Ideal!

Recipe / serves 2

Ingredients

25g dark chocolate

1 large egg white, room temperature

Squeeze of lemon juice

1 tsp caster sugar

Method

Break up the chocolate, then add to a bowl. Place the bowl over a simmering pot of water, making sure that the bottom of the bowl doesn’t touch the water. Melt the chocolate over a low heat, stirring every now and then until smooth. Remove from the heat, and allow to cool before using.

Add the egg white and squeee of lemon juice to a spotlessly clean bowl, then whip with a hand mixer until light and fluffy - should take about 2 minutes.

Add in the caster sugar, then continue to whip until the mixture is glossy.

Add one teaspoon of the whipped egg white mixture into the cooled melted chocolate, and stir quickly until fully incorporated. Then add the rest of the egg white mixture and fold gently until combined, taking care to not knock out the air.

Divide the mixture into two cups/ramekins, then leave to set in the fridge for at least 2 hours.

Add a dollop of whipped cream or crème fraîche, with some shavings of chocolate and enjoy!

Notes

This mousse will keep in the fridge for up to three days.
