Gingerbread White Hot Chocolate

Spiced + sweet, just the way i like it

This takes a little time and a little effort but WOW is it worth it. It’s a ganache based hot chocolate, so there’s a little bit of time spent whisking over a bain-marie but just do it while you’re doing other bits in the kitchen, like the dishwasher of whatever, and the time will fly and you’ll have a beautiful cup of spiced white hot chocolate in no time. Also, this is a super rich, super sweet hot choc. You’re not gonna want too much of it, like a small cup would do ya. And yes, I would definitely recommend some marshmallows and the biscuits on top because why the hell not, it’s still technically the Christmas season, the ultimate season of indulgence.

Use the nicest white chocolate you can find - def not the cheap stuff. Your hot choc will thank you for it.

Recipe / serves 1

Ingredients

150ml milk of your choice - I used oat

65g white choc, chopped

1/8 tsp ginger powder

1/8 tsp of cinnamon

Pinch of sea salt

Marshmallows and crushed gingersnaps, shortbread or Biscoff to top it all off

Method

Combine 65ml of the milk with the white choc in a bowl over a bain-marie. Best to have the water underneath bubbling and boiling away underneath before you add the bowl on top. Reduce the heat to a medium once you add the ingredients into the bowl on top.

Stir until the chocolate is melted, then add the spices and get whisking. You want it to develop into a really thick, glossy ganache - this might take a little time so just whisk it occasionally, and keep an eye on it. You might notice the white chocolate becoming a little more golden, which is all good, it’s just caramelising and deepening its flavour. You also might notice that there’s a yellow layer that kind of forms on top of the mixture, which is just the cocoa butter separating from the sugar in the chocolate. It’s totally natural, just keep whisking, it’ll come back together.

Once it’s really thick, sowly add the rest of your milk, bit by by, whisking each time until it’s combined into th mixture. Give it a taste test, add a little more milk if it’s too thick for you, more spice if you want it. whatever you like.

Pour into a cup, top with marshmallows and your crushed biscuit of choice, and enjoy next to the fire or a very warm radiator.
